
It’s finally the halfway point and it’s time to start reaping the benefits of whole clean eating for weeks. Cutting out dairy and adding a ton of extra vitamins and minerals have done wonders on my hair and skin. While it is still no match for the irritating ‘mascne’ there’s hope for everything else. I also noticed my jeans/jeggings feel looser in the waist and thighs. Whoot whoot!
Eating something like eggs goes a long way in the morning. I’m not a huge early morning breakfast eater, but I do like breakfast foods. I passed on the banana the last two mornings and went with scrambled eggs. (My husband made these both mornings I would never be able to wake up early enough to have them before work-maybe I’ll try freezing some little omelettes on my next meal prep day). Yesterday I noticed my appetite was curved around lunch and lasted me up until dinner.
Breakfast: scrambled eggs, unsweetened almond milk+coffee
Lunch: mini Lara Bar, trail mix with raisins and unsweetened coconut flakes, strawberries, carrots and guacamole
Snack: small latte coffee with unsweetened macadamia milk, pickles, handful of cashews
Dinner: heart of palm linguine (half with leftover cashew Alfredo and half with sugar free marinara sauce) baked potato and ghee.
Takeaway: In my opinion heart of palm noodles were no better than zoodles. It may be just me but I cannot get over the taste of the texture of these noodle substitutions. I think I’ll just wait until I can eat the real deal again. I’m too much of a die hard pasta lover.
I say things like, “with Mac milk please,” I guess I’m just that kind of person now.
